1/4cupfinely chopped red onion
2 tbspchopped cilantro
lemon zest, a few scrapes over the bowl
salt and freshly ground pepper to taste
4 slices of fabulous breadwe used Rosemont's Sourdough Boule
4slices Havarti cheese with dillplain is fine or so is onion
2tbspbutter for toasting
olive oilfor cooking tuna
Instructions
To quicken cooking time you can slice your albacore into two thinner slices. Heat your sauce pan to medium. Add tuna and cook about 3 minutes a side. You will see the white cooking line. Try not to overcook but if you do, tuna salad is forgiving. When tuna is done, place on plate and put in the fridge to cool.
Once tuna is chilled, put in bowl, use a fork to break apart tuna into desired texture. Add mayonnaise and blend. Add onions, cilantro, lemon zest, salt & pepper.
Over medium heat add butter to your saute pan. Put a slice of cheese on each side of bread. Divide and place tuna salad on top of cheese. Close sandwich and add to pan, brown each side. If you have a weight it will help the cheese melt or you can cover it with a lid. If you have a panini maker all the better!
Notes
Tuna salad is a very personal thing. Feel free to add your favorites like, pickles, capers, etc! There's a lot of room here to make it totally your own. The main thing is to use FRESH albacore tuna! You'll never want to eat tuna out of a can again!
